  1. 01Grind coarse

    Like kosher salt. Too fine and the press silts; too coarse and it tastes thin.

  2. 02Heat the water

    93°C — just off a local boil. If it was a rolling boil, let it sit about 30 seconds.

  3. 03Bloom, then fill

    Wet the grounds, stir, wait 30s. Then fill, lid on, plunger up.

  4. 04Steep 4:00

    Leave it alone. No peeking, no extra stirs.

  5. 05Plunge slowly

    Steady pressure, about 15–20 seconds. If it fights you, the grind is too fine.

  6. 06Pour now

    Don’t let it sit on the grounds. Decant the pot and drink it while it’s sweet.
